Changes in the terms and direction of international trade in seafood, an increased understanding of and concern for the public health risk imposed by seafood products, and advances in information management technology combine to open opportunities to manage more effectively seafood-borne risk. Present regulatory mandates and programs lack sufficient integration for effective risk mitigation and do not adequately reflect the trans-national nature of seafood trade or the increased complexity of seafood production. This paper argues that the concept of a “chain of custody” – from the ocean to the final consumer – provides a useful integrating framework for understanding and refining efforts to reduce public health concerns surrounding the consumption of seafood.  相似文献

Consumers world-wide are driving changes in the agriculture and food sector. Rising consumer income, changing demographics and lifestyles, and shifting preferences due to new information about the links between diet and health all contribute to new demands for foods. At the same time, technological changes in production, processing and distribution, growth in large-scale retailing, and changes in product availability, as well as expansion of trade world wide, have contributed to a rapidly changing market for food products. Changes in seafood consumption reflect these changes. The changes in consumer consumption patterns, new technologies and trade in product offer both expanded markets as well as new challenges to consumer exposure to food-borne risks. The strict quality control requirements of retail brokers, growth of private labels, and development of value-protecting marketing channels have become increasingly important in food markets. This paper addresses major trends that affect seafood consumption and the market for seafood products and the implications of these changes for consumer risk exposure to food safety hazards. The current economic environment highlights similarities and differences between the developed and developing countries, as well as diversity worldwide in consumption of seafood. Within this context, four major trends affect consumer consumption of foods, including seafood and fish products today: rising income; changing demographics; changing markets for food; and an increasingly global market for food products. Changes in consumer risk exposure to food safety problems are addressed in the context of these trends.  相似文献

Reducing marine-based public health risk requires strict control of several attributes of seafood products, often including location and conditions of catch or aquaculture, processing, and handling throughout the supply chain. Buyers likely will also be interested in other attributes of these products such as eco-friendliness or taste. Development of markets for improved safety, as well as for other quality attributes, requires an effective certification and tracking of these attributes as well as their communication to buyers. Several challenges must be met if labeling, particularly consumer labeling, is to support the development of markets for improved seafood safety.  相似文献

Human intake of persistent organic pollutants (POPs) occurs primarily through diet and fish and other seafood represent the principal means of contamination. Despite this, few legal limits have been established to protect human health from the various chemicals that are alleged to be carcinogenic or endocrine disruptor compounds.Several pools of edible clams (Tapes philippinarum and Venus gallina) bought in different Italian and European markets were examined in order to perform a risk assessment of some of these contaminants and also to identify possible health issues. POP concentrations in the soft tissues of mollusks varied considerably among source farming sites, particularly in the Venice Lagoon. Some POPs (DDTs, HCB and HCHs) showed very low concentrations and no risk for human health, in line with the limits established by European law. In contrast, PAHs could represent a potential hazard for human health and PCB levels in the most contaminated sites reached or even exceed the Minimal Risk Level as set by the ATSDR for human consumption, even if all the samples did not exceed the PCB limits in edible seafood as set by the FDA.  相似文献

This study determined the concentrations of major and trace elements in shellfish (oysters, clams and mussels) and conducted an assessment of the health risks due to the consumption of contaminated seafood. Samples were collected at 34 sites along Todos os Santos Bay, Brazil. The elements were determined by ICP OES and Hg by Direct Mercury Analysis. Relatively high concentrations of trace elements (As, Zn, Se and Cu) were found in seafood tissues. Potential daily intake of As, Co, Se, Zn and Cu associated to shellfish consumption suggested relevant non-carcinogenic risk for all studied locations. Copper was the element that posed the greatest non-carcinogenic risk, while Pb posed the highest carcinogenic risk. Health risks for humans were greatest from the consumption of mussels. Contaminated shellfish offer the greatest risk for children, subsistence fishers and subsistence shellfish consumers.  相似文献

Organotins (OTs) have caused widespread adverse effects on marine organisms, while they can also induce health problems to humans via consumption of contaminated seafood. This study aimed to quantify the tissue concentrations of OTs in 11 seafood species in Hong Kong, and assess the human health risk for consuming these species. The tongue sole Paraplagusia blochii had the highest concentration of total OTs. Triphenyltin (TPT) accounted for 56–97% of total OTs. The highest hazard quotient (HQ) for TPT was 1.41 in P. blochii, while the HQs for butyltins were much less than 1. The results indicated that it is likely to have certain health risks for consuming P. blochii due to its high TPT contamination. Therefore, TPT should be a priority pollutant of concern. Appropriate management actions should be taken to control its use and release in the region in order to safeguard the marine ecosystem and human health.  相似文献

This paper serves as the missing piece in a more fuller understanding about economic losses from marine pollution, and demonstrates what losses have been estimated in the literature. Biological effects from marine pollution are linked with resulting economic effects and losses. The merging of these two areas is usually absent in studies of marine pollution losses. The literature has examined several effects due to marine pollution: damages due to harvest closures-restrictions, damages from consumption of unsafe seafood, damages due to decreased recreational activity, and damages related to waterfront real estate adjacent to contaminated water. Overall, marine pollution can and has resulted in sizable economic effects and losses. On the basis of the literature there is adequate justification for public policy actions to curb marine pollution, require inspection of seafood for toxic substances, and preserve marine water quality and sensitive marine environments.  相似文献

In order to evaluate the exposure risk of lead and cadmium in seafood for coastal residents in the coastline of the South China, representative seafood such as sea fish, crustaceans and molluscs were collected and used as research samples in many sampling points. By determining lead and cadmium content in sample using graphite furnace atomic absorption spectrometry, we carried out a safety evaluation of lead and cadmium contamination of seafood by single factor pollution index method. By calculating lead, cadmium intake of the coastal residents eating seafood, their exposure risk of lead, cadmium was assessed. It was found that, firstly, the content of lead and cadmium in mollusks was both higher than sea fish and crustaceans in the same waters. Secondly, the lead and cadmium pollution in seafood near the mouth of Pearl River was the most serious. Thirdly, lead and cadmium intakes of the coastal population eating seafood were at a basic level of security, but there were certain risks on the males less than 17 years old eating molluscs in Shenzhen Bay.  相似文献

Fluoride in a greatly diluted form is part of the effluent from an aluminium smelter on the Northumberland coast in north-east England. Fluoride is concentrated in the skelton of birds, fish and invertebrates and to a smaller extent in the skin of fish. All concentrations found both in the seawater and in local animals are within the normal range and it is unlikely that the additions from the smelter materially affect the situation. Since fluoride concentrates in inedible tissues there appears to be little health risk from this source in seafood.  相似文献

Dietary intake is one of the important routes of human exposure to brominated flame retardants (BFRs) such as polybrominated diphenyl ethers (PBDEs). The use of PBDEs may also result in exposure to polybrominated dibenzo-p-dioxins and dibenzofurans (PBDDs/DFs), as these compounds are impurities in technical mixtures of BFRs and can also be formed unintentionally by the same processes that generate chlorinated dioxins. This study determined the concentrations of polybrominated compounds in common seafood in Guangzhou and Zhoushan, and assessed the health risks of these chemicals via consumption of contaminated seafood. Seafood samples (fish, bivalves, shrimp, crab, and cephalopods) purchased from local markets in 2003 and 2004 were analyzed for PBDEs and PBDDs/DFs. The highest concentration of total PBDEs (46.3 ng g(-1) lipid wt.) was detected in fish from Guangzhou, in which BDEs 47 and 209 were the two predominant congeners. The total daily intakes of PBDEs, PBDDs, and PBDFs were, 946, 6.39, and 6.54 pg kg(-1) body weight (bw) in Guangzhou, and 489, 4.99, and 7.65 pg kg(-1) bw in Zhoushan, respectively. The hazard ratios for PBDDs and PBDFs were both greater than unity, indicating that these compounds may pose some health risks to the local population.  相似文献

Selenium’s (Se) protective effects against mercury (Hg) toxicity have been demonstrated; however, this is seldom considered in health assessments, where dietary exposure is still evaluated by Hg concentration alone. Se:Hg ratios and selenium health benefit values (Se HBVs) offer a more comprehensive seafood safety model. Here we describe total mercury (THg), methylmercury (MeHg) and Se concentrations in fish from a Hg-polluted estuary. Spatial variation in THg, MeHg and Se was evident, though all regions maintained Se:Hg ratio values >1. Se HBV varied between regions and in one region mean negative values (−5.17) were evident. This study provides the first evidence that quoting a single all-encompassing Se HBV is not appropriate when species demonstrate strong site fidelity. It highlights the need for research into Se–Hg relationships in environments with established Hg pollution and reinforces the assertion that Se concentration be considered in assessments of human health risk to Hg exposure.  相似文献

The marine ecosystem of the Pearl River Delta, located on the southern coast of China, has been heavily exploited following the rapid economic growth that has occurred since the 1980s. This investigation aimed to elucidate trace organic contamination in marine biota inhabiting the Pearl River Delta area. Biota samples, including green-lipped mussels (Perna viridis), oysters (Crassostrea rivularis) and shrimp (Penaeus orientalis) were sampled from 16 stations fringing the Estuary. Elevated concentrations (on a dry weight basis) of polycyclic aromatic hydrocarbons (27.8–1041.0 ng/g), petroleum hydrocarbons (1.7–2345.4 μg/g), polychlorinated biphenyls (2.1–108.8 ng/g), DDTs (1.9–79.0 ng/g), and hexachlorocyclohexanes (n.d.–38.4 ng/g) were recorded. A human health risk assessment was conducted to estimate the risk to local residents associated with the consumption of biota collected from the Pearl River Estuary. The results indicated that PCBs were at levels that may cause deleterious health effects in populations that consume large amounts of seafood. However, it would be instructive to establish health criteria for trace organic contaminants that are specific to the local populations, in order to derive a more accurate and relevant health risk assessment.  相似文献

Emerging infectious diseases continue to place a strain on the welfare of the population by decreasing the population’s general health and increasing the burden on public health infrastructure. This paper addresses these issues through the development of a computational framework for modeling and simulating infectious disease outbreaks in a specific geographic region facilitating the quantification of public health policy decisions. Effectively modeling and simulating past epidemics to project current or future disease outbreaks will lead to improved control and intervention policies and disaster preparedness. In this paper, we introduce a computational framework that brings together spatio–temporal geography and population demographics with specific disease pathology in a novel simulation paradigm termed, global stochastic field simulation (GSFS). The primary aim of this simulation paradigm is to facilitate intelligent what-if-analysis in the event of health crisis, such as an influenza pandemic. The dynamics of any epidemic are intrinsically related to a region’s spatio–temporal characteristics and demographic composition and as such, must be considered when developing infectious disease control and intervention strategies. Similarly, comparison of past and current epidemics must include demographic changes into any effective public health policy for control and intervention strategies. GSFS is a hybrid approach to modeling, implicitly combining agent-based modeling with the cellular automata paradigm. Specifically, GSFS is a computational framework that will facilitate the effective identification of risk groups in the population and determine adequate points of control, leading to more effective surveillance and control of infectious diseases epidemics. The analysis of past disease outbreaks in a given population and the projection of current or future epidemics constitutes a significant challenge to Public Health. The corresponding design of computational models and the simulation that facilitates epidemiologists’ understanding of the manifestation of diseases represents a challenge to computer and mathematical sciences.  相似文献

Epidemiologic studies of water associated illness often have to rely on self-reported symptoms of the outcome illness(es) under study. Individual participant's perception of risk, in theory, can affect the validity of self-reported symptoms. The magnitude and effect of possible "risk perception bias" was evaluated as part of a series of randomized trials designed to assess infectious disease transmission via exposure to marine recreational waters with modest sewage contamination. All study subjects were blinded to both their individual indices of exposure and the outcome illnesses under study. Of the five outcome illnesses studied, the effect of "risk perception bias" only effected one: skin ailments. Although analysis of crude rates of skin ailments showed the exposed group (bathers) to be 3.5 times more likely to report skin ailments relative to the non-exposed (non-bathers), when the data was stratified by any perceived health risk of bathing in such waters, this association was shown to be spurious in nature. Bathers having pre-conceived notions of any health risk due to the exposure were 10.63 times more likely to report skin ailments relative to the unexposed (non-bathers) (95% CI 2.36-47.8, P = 0.0002), while bathers without any pre-conceived notion of risk were no more likely to report skin ailments relative to non-bathers (OR = 0.60, 95% CI 0.11-3.24, P = 0.71). Further stratification by exposure grouping showed bathers with pre-conceived notions of excess risk to be 4.78 times more likely to report skin ailments relative to bathers without any notion of excess risk (95% CI 1.04-21.86, P = 0.03), while among non-bathers those with pre-conceived notions of risk were 3.70 times less likely to report skin ailments relative to non-bathers without any pre-conceived notion of risk (95% CI 0.70-19.60, P = 0.10). This study shows that "risk perception bias" can be strong enough to lead to spurious associations in the presence of self-reported symptoms, and should be controlled for in future epidemiologic studies of recreational water associated illnesses and other water associated environmental exposures where the use of self-reported symptoms cannot be avoided.  相似文献

Everywhere in the world, food and agricultural policy is under scrutiny. Questions are being asked about both past and present public policy and strategy. The motives for reassessment are various, including trade wars, health impact, ecological concerns, population, citizens rights. After decades in which policy was centrally concerned with raising productivity and production, using a fairly simple Input-Output Model, the need for a more complex model for food and farming is becoming clear. The success of the dominant Input-Output Model of farming is that it can claim to have kept up with rising population trends and unleashed astonishing efficiencies. Critics point out, however, that these efficiencies have insufficiently accounted for costs to the environment, health and social well-being. A debate about these considerations grew in intensity during the 1990s, but had earlier roots. As a result, a new model of food and agriculture's contribution to health is emerging.  相似文献

The Gulf of Thailand has been a major marine resource for Thai people for a long time. However, recent industrialization and community development have exerted considerable stress on the marine environments and provoked habitat degradation. The following pollution problems in the Gulf have been prioritized and are discussed in details: (1) Untreated municipal and industrial waste water are considered to be the most serious problems of the country due to limited waste water treatment facilities in the area. (2) Eutrophication is an emerging problem in the gulf of Thailand. Fortunately, the major species of phytoplankton that have been reported as the cause of red tide phenomena were non-toxic species such as Noctiluca sp. and Trichodesmium sp. (3) Few problems have been documented from trace metals contamination in the Gulf of Thailand and public health threat from seafood contamination does not appear to be significant yet. (4) Petroleum hydrocarbon residue contamination is not a problem, although a few spills from small oil tankers have been recorded. A rapid decrease in mangrove forest, coral reefs, and fisheries resources due to mismanagement is also discussed.  相似文献

Recent advances in pollution control and monitoring technologies, improved analytical capability, changes in government priorities and results of scientific studies have substantially changed our views and perceptions towards marine pollution in the last two decades. Globally, the problems caused by eutrophication, water borne pathogens and xenobiotic compounds are likely to be exacerbated and pose significant ecological and/or public health risks in the coming years, especially in developing countries. The large amount of anthropogenic input of nutrients has caused major changes in the structure and function of phytoplankton, zooplankton, benthic and fish communities over large areas, and such a trend is likely to continue in many coastal waters. Escalated public health risks associated with the increases in frequency and severity of toxic algal blooms are also of growing concern. Reduction of nutrient input through changes in land-use and farming practises, and the development of cost-effective methods for nutrient removal are required. Water borne pathogens affect large numbers of people through consumption of contaminated seafood and direct contact with contaminated water, and such problems are much more serious in developing countries. Current techniques in monitoring bacterial indicators in water and shellfish have clear limitations and cannot afford adequate protection to safeguard public health. Emerging molecular techniques, such as multiplex PCR and specific gene probes, are likely to provide new and cost effective tools for monitoring water borne pathogens in the coming years. Nowadays, xenobiotic compounds can be found almost everywhere in any marine ecosystems. Although these compounds normally occur at very low concentrations and their effects are not well understood, there is growing concern about the chronic exposure and bioconcentration/biomagnification of xenobiotic compounds. In particular, endocrine disrupters which may cause reproductive dysfunction and threaten species survival, are of growing concern. At present, most of our knowledge on toxic effects of xenobiotic compounds is derived from short-term exposure of a single species to high (environmentally unrealistic) and uniform concentrations under laboratory conditions. Data so derived are largely inadequate in predicting ecological effects in the field, in which multi-species are being exposed to varying, low concentrations under an interacting and complex environment. NOEC and LOEC for population/community/ecosystem, as well as the time required for population/community/ecosystems to recover after toxicant insult, are poorly known. These important topics will become the major endeavours for ecotoxicologists in the years to come.  相似文献

Fish hold effluent and the effluent produced from the cleaning of fish holds may contain organic material resulting from the degradation of seafood and cleaning products (e.g., soaps and detergents). This effluent is often discharged by vessels into near shore waters and, therefore, could have the potential to contribute to water pollution in bays and estuaries. We characterized effluent from commercial fishing vessels with holds containing refrigerated seawater, ice slurry, or chipped ice. Concentrations of trace heavy metals, wet chemistry parameters, and nutrients in effluent were compared to screening benchmarks to determine if there is a reasonable potential for effluent discharge to contribute to nonattainment of water quality standards. Most analytes (67%) exceeded their benchmark concentration and, therefore, may have the potential to pose risk to human health or the environment if discharges are in significant quantities or there are many vessels discharging in the same areas.  相似文献
