栉孔扇贝氨基酸组份与含量的比较研究

摘    要:本文指出栉孔扇贝干贝氨基酸含量较高,次于虾夷扇贝,高于海湾扇贝。其氨基酸的含量与个体大小成反比。在软体部中以闭壳肌的氨基酸含量最高:闭壳肌的平滑肌的氨基酸含量高于横纹肌。从分析栉孔扇贝的17种氨基酸中以谷氨酸含量最高。栉孔扇贝外套膜和内脏块均含有相当量的氨基酸,可加以利用

Abstract:The compoy of farrers scallop has a high amino acid content, which is higher than that of the bay scallop, only next to that of yessoensis scallop. The amino acid content of compoy varies with the size of the scallops, i.e., die amount of amino acid content is in reverse proportion to the scallop's size. Of all the soft parts of farrer's scallop, the adductor muscle has the highest content of amino acid, with the content of non-striated muscle higher than mat of the striated muscle. Compoy contains seventeen different kinds of amino acid, among which glutamic acid constitutes the greatest portion. Besides the compoy, the mantle and visceral mass of the farrer's scallop also contain a certain amount of amino acid which can also be processed and utilized.
