摘    要:本文探讨了微晶甲壳质的乳化性能以及它在乳白鱼肝油中的应用。微晶甲壳质的独特性能如乳化性,持水性,稳定性等在乳白鱼肝油中都表现的比较明显。

Abstract:This paper explors the emulsification properties of micro-chitin and its appl ication to milky-white cod-liver oil. Micro-chitin has special properties such as emulsifiability, water-holding ability and stability. All these function positiyely in milky-white cod-liver oil.
