盐酸甜菜碱对短盖巨脂鲤脂肪代谢的影响

摘    要:采用现场实验的方法,以短盖巨脂鲤为对象进行了60天养殖实验,探讨盐酸甜菜碱对其脂肪代谢作用机理。结果表明,盐酸甜菜碱使整鱼水分和含脂量呈下降趋势,鱼肌肉含水量下降,肝脂量极显著降低;肌肉和肝脏中游离肉碱、酸不溶肉碱含量和酸不溶肉碱与游离肉碱的比例极显著提高;血清总胆固醇和甘油三酯极显著下降,脂肪酶活性呈升高趋势;甜菜碱对肠系膜脂肪酶活力产生影响,使鱼肌肉肌问脂肪分布发生明显变化。实验结果提示:甜菜碱可改善肉质,它参与机体代谢活动,使肝脏和肌肉中甲基化产物(肉碱)含量增加,影响肠系膜脂肪酶活力,改变体脂和鱼肉脂肪酸组成,进行体脂重分配。

Abstract:This research was conducted to approach to lipid metabolism mechanism of betaine hydrochloride in Colossoma brachypomum fingerlings with average initial weight (83.14±15.36)g during October to December, 1997. The fish were fed for 60 days under the conditions of circulation, filtration and controlled temperature. The results showed that adding betaine hydrochloride decreased moisture and crude fat contents of whole fish, decreased the moisture of fish muscle. Betaine hydrochloride decreased lipid of liver significantly. It was found that betaine hydrochloride significantly affected the contents of free carnitine, acid-insoluble carnitine and acid-insoluble carnitine/free carnitine ratio of liver and muscle. The serum biochemical indexes indicated that the cholesterol and triglyceride concentration decreased significantly; lipase level of 0.8% betaine hydrochloride group increased. The result of mesenterium lipase activity showed that different levels of betaine hydrochloride had different effects on it. The figure of tissue slices showed that betaine hydrochloride made muscle fat contents changed obviously. The results of this research implicated that betaine hydrochloride could improve fish meat quality, it participate body lipid metabolism by increasing methylic products of fish liver and muscle (canitine). It affects the activity of mesenterium lipase, changes body fat and fatty acids composition of muscle. Thus it redistributes lipid deposition.
