O2O模式(Online to Offline)使餐饮店经营模式与空间分布发生巨大变化,餐饮店空间分布现象与机制成为研究热点。本文将餐饮店分为仅提供堂食服务的传统店和同时提供堂食与餐饮配送服务的外卖店,利用核密度、双变量空间自相关、半变异函数、标准差椭圆、空间计量模型等方法,分析广州市中心城区传统店与外卖店的空间分异与机制。研究发现:① 2020年传统店主要集聚于自荔湾区多宝街道东至天河区石牌街道;外卖店呈多中心分布,以天河区天河南街道、冼村街道、海珠区江南中街道和赤岗街道为核心;二者在越秀区中部、天河区西南部、车陂街道、海珠区西北部等有多处高高集聚区。② 两种餐饮店空间分异较明显,易受随机性因子影响;外卖店较少分布在越秀区和荔湾区,整体分布范围较小,仅有很弱的空间自相关性,更多呈零散分布特征。③ 餐饮店空间分布受人口密度和餐饮店集聚的正作用;但受教育程度、路网密度、邻近高等院校、公交站、商圈等因素能提高外卖店比例,外卖店有更高店铺付租能力,更邻近地铁站和低经济密度地区,传统店则与其相反。  相似文献

This paper focuses on a case study of an 'alternative' food network based in the Abruzzo National Park, Italy, to explore how ideas of sustainable farmland management can be expressed through broader understandings of developing networks of care concerned with local economies and societies, high-quality specialist food products, particular 'traditional' farming practices and livestock breeds, as well as the ecology of a farmed landscape. The scheme allows customers, internationally as well as in Italy, to 'adopt' a milking sheep on a large mountain farm. In return, adopters are sent food products from the farm. The adoption scheme is inter-twined with an agri-tourism project which provides accommodation, runs a restaurant and engages in educational activities. The scheme is the result of the individual initiative of its founder, and is associated with a strongly expressed ethical position concerning the value of sustaining valued local rural landscapes and lifestyles, and the importance of 'reconnecting' urban dwellers with rural areas, farming and 'quality' food production. Yet the localness of the scheme is sustained through wider national and international networks: volunteer and paid workers are drawn from several European countries, funding has been acquired from the EU LEADER programme, and internet and transport technologies are essential in connecting with and supplying an international customer base. The broader economy of care instanced in this case study draws attention to a need to develop strategies for sustainable farmland management constructed around wider programmes of social, economic and cultural, as well as environmental, concern.  相似文献

采用动态、辩证的观点对宗教空间进行了重新审视,通过女性穆斯林在广州先贤清真寺的空间实践,说明宗教空间不仅是被宗教经典和历史定义的神圣空间,也是穆斯林群体经由自身丰富的实践活动所不断进行意义再生产的日常生活空间。广州先贤清真寺的女性穆斯林移民群体在全球化的多元氛围中突破了原先家长制的宗教教育体制,转而从公共宗教生活中认知宗教,形成更加包容、进步的宗教观念,增加了自身的族群认同。另一方面,基于女性宗教空间开展的日常生活实践,则不仅为女性穆斯林群体融入新的城市生活提供了丰富的社会资本,更让一部分女性穆斯林成为全球贸易中的参与者。这些都有助于城市中女性穆斯林群体社会地位的提升。  相似文献

This paper focuses on Hong Kong's Gravesweeping Festivals, Qingming and Chongyang. The practices carried out in urban cemeteries at these Festivals are over two thousand years old, and represent “time out” from modern “clock time”. They are examined in the context of Giddens' (1985) reworking of Hägerstrand's time‐space geography, and of Douglas' (1966) discussion of pollution. It is suggested that the cemeteries are regarded as dangerous places because they represent liminal spaces. Giddens' dimension of span enables a distinction to be made between, on the one hand, the long‐established cultural significance of the grave, and, on the other, the recentness of the urban cemetery. The dimension of form(redefined from Giddens' original concept), applied to some details of cemetery landscapes, reveals the “worlds apart” of the non‐material worlds of the spirits and of fengshui. By considering the Festivals in the light of Giddens' dimension, character, it emerges that the Gravesweeping Festivals are, as they have been for centuries, firmly embedded in Hong Kong's social system, where routines of ancestor veneration continue to renew and strengthen the family bonds that are at the heart of Confucian values. Furthermore, their continued observation may well represent practices that are of deep ontological significance to the predominantly immigrant community of Hong Kong.  相似文献

地方感的研究为探讨人地关系提供了新的视角。情境主题餐厅作为能提供特殊体验的一种微观文化空间,为员工构造了一个“异位(heterotopias)”的超现实空间(hyperreality)。本文通过对广州味道云南食府这一典型情境主题餐厅员工的体验式观察和深度访谈,探讨了情境主题餐厅员工对不同尺度空间产生的不同地方感特征及其原因,得出以下结论:① 员工对情境主题餐厅及其所处城市的地方感存在差异。他们对餐厅具有强烈的地方认同和地方依赖,对餐厅所处城市具有地方依赖,但对餐厅以外的其他城市空间不存在地方认同;② 员工对情境主题餐厅地方感特征产生的原因是餐厅融洽的社交环境、良好的工作和生活环境以及较高认同的情境(文化);③ 员工对情境主题餐厅所处城市地方感特征产生的原因是城市所提供的良好工作条件、较差的自然环境、低熟悉的城市空间、对家乡的依恋和对“异乡人”的身份认同;④ 员工对情境主题餐厅及其所处城市的熟悉程度、环境和文化认同程度和归属/依恋程度的差异是员工对两者地方感存在差异的原因。结论对于丰富地方感在微观空间层面的理论与实证研究有重要的价值,能够为城市中其他微观文化空间的地方感研究提供借鉴。  相似文献

通过对广州南越王博物馆2015年1月至2017年7月期间的1 294条旅游留言档案(线下留言207条,线上留言1 087条)的文本分析,发现建筑遗址、文物遗产、解说系统和游客参与共同构成了博物馆文化展演的“舞台”“道具”“演员”和“观众”维度因素体系,“建筑遗址”通过真实遗址和现代展馆构建了满足观众对历史文化想象的“舞台”,“文物遗产”和“解说系统”分别以静态和动态的方式将城市记忆内涵进行解构,最后“游客参与”使记忆主体发挥能动性,完成自身对记忆内涵的再编码,实现城市记忆的建构和传承,因此这4个因素在城市记忆构建过程中分别发挥了唤醒、强化、活化和传承作用,构建了博物馆城市记忆链,并进一步强调了记忆主体感知行为、博物馆文化原真特性对于文化展演和记忆传承效果的重要影响。  相似文献

在文献梳理基础上,采用结构方程模型方法,构建基于服务质量、食物质量、环境、原真性食物、原真性环境、原真性服务、感知价值、满意度、行为意向等9 个概念的理论模型,讨论广州西贝西北菜餐厅跨地方饮食文化生产的顾客行为意向。研究发现:① 跨地方文化生产餐厅的原真性可从原真性食物、原真性环境、原真性服务三个维度进行解释。原真性饮食文化生产凸显了地方性,但被消费者认知的原真性,是一种被凸显的、符号化的、重塑的原真性,是对学术界争论的几种原真性的杂糅和融合。② 在跨地方文化生产中,原真性环境和服务比原真性食物更重要,尤其是在定位高档的跨地方饮食文化消费情境中,原真性服务对顾客满意感有显著影响,充分证明原真性服务是跨地方文化生产餐厅原真性的重要组成部分,对顾客的原真性体验产生积极影响。这是地方性饮食在跨地方饮食文化生产中的原真性重塑及融合的结果。③ 原真性服务对跨地方饮食文化的原真性重塑具有关键作用,消费者对跨地方饮食文化原真性的体验,取决于远离饮食文化源地的经营地的地方性文化特质。  相似文献

ABSTRACT

Households and community organizations are involved in the creation, use, care, and management of urban spaces, including through food practices such as planting, foraging, harvesting, weeding and pruning at the ambiguous edges of public and private property. Drawing on case studies in Boston, Massachusetts, we examine how commons are articulated through these practices, particularly in relation to multiple dimensions of property rights. Specifically, we ask how food practices can open urban spaces to negotiations around access, responsibility, care, and ownership, especially when (property) ownership is not an end-goal, but a circumstance shaping other practices. Using interviews and participant observation of individuals and organizations involved in urban food provisioning, we explore how households and community organizations are interrupting fixed notions of property ownership, by practicing urban commons. These practices and negotiations demonstrate ongoing shifts in the meanings of urban space with flexible understandings of property and ownership.  相似文献

Currently, the topic of food waste and its environmental impacts is attracting increasing attention among academic researchers. Based on an investigation of restaurants in Beijing, this study analyzes the quantities, structures, characteristics and costs of the agricultural resources related to food waste in the catering industry in Beijing. The results show that: (1) The average food waste per capita per meal is about 75.02 g (raw) for food away from home among Beijing urban residents, which means that about 10.52% of the food is wasted. (2) According to the quantitative ranking of different categories of food waste, vegetable is the most wasted, followed by meat, aquatic products, and grains. The foods in the other categories are wasted much less. (3) Food waste is affected by the restaurant type, as well as the number, gender, age, education level, and consumption motivation of the consumers. (4) Based on the estimated food waste per capita, about 417.92 thousand tons of food is wasted annually at the consumption stage in the catering industry in Beijing. This food waste amount is equivalent to approximately 765.53 tons of cereals which are wasted, and this represents 79.66% of cereals production and 13.15% of cereals consumption in Beijing. Estimated by the required land use, this amount of food waste means that the total production of approximately 166.12 thousand ha of arable land is being wasted in Beijing.  相似文献

伴随着地理学的文化转向以及“身体”“情感”视角的引入,饮食文化的空间问题开始引发人文地理学界的关注。借助身份建构过程模型理论(identity process theory, IPT),依托对38位广州本地人的深度访谈,阐释外来饮食文化对其身份建构过程的影响及代际差异。研究发现,外来饮食文化的涌入引发了老一辈广州人多重的身份危机感,激发他们投身于地方传统饮食文化复兴实践,以对传统的忠诚和坚守来建构其地方身份。而自幼就被外来及本土饮食文化共同包围的年轻人则善于在不同情境下采纳不同文化态度和策略来建构其地方身份,缓解身份危机。该代际差异折射出饮食文化空间政治结构的轮回,而恰恰是这一空间政治的轮回孕育了地方饮食文化的继替。  相似文献

Multifunctionality is today a keyword to understand rural areas in Europe. Depending on the context, it may refer to farm households, areas, or the agricultural sector. For farm households, it can be defined as their capacity to respond adequately to societal and consumer demands through the provisioning of a variety of goods, services, and non-market functions. These farm household practices are often categorized as ‘deepening’, ‘broadening’, or ‘regrounding’. In the article, the multifunctional practices of farm households in Greece are discussed within this conceptual framework with the presentation of specific examples that are derived from fieldwork. The case studies represent different spatial units and practices, covering deepening (organic farming, integrated management), broadening (agrotourism, short food supply chains), and regrounding (pluriactivity) practices of Greek farm households. The most important findings link multifunctionality mostly to pluriactivity, with complex and diverse strategies. Finally, some of the most important activities are not practised by farm households but by upstream actors.  相似文献

基于广州市居民食品购物行为问卷调查数据,利用交叉频数、卡方检验和对应分析,通过网购食品者同不网购食品者、不同区位网购食品者、不同网购食品频率者的对比,分析了网络购物影响下广州市居民购买食品行为的一般特征和空间特征。结果发现:1)网络购买食品的接受度总体不高,传统实体购物模式仍占主导,网络购买食品对实体店购买食品有一定的替代沁。2)网络购买食品对居住地周边商店负面影响较大,对商业区影响很小,超市和百货公司休闲零食、地方特产类食品销售会受到一定负面影响,生鲜类商店所受影响较小。3)不同区位居民网购食品的频率差异较小,单次花费、时间和网购原因空间差异较大,实体购物条件差的居民更倾向于网络购买食品,验证了Anderson等提出的“效率假说”。4)网购食品者的实体购物出行目的休闲性增加,周末购物出行更频繁,网购食品频率高的居民购物出行时间更短。  相似文献

In this study, we use a combination of geographic information systems and Bourdieuan social theory to analyze the development of a food policy council in Birmingham, Alabama. The questions we investigate are: What is the relationship between race and culture? How is this relationship manifest in practice within the alternative food and agriculture movement? In our work, we show how the racially segregated conditions of metropolitan Birmingham forge divergent habitus among Blacks and Whites in the region. Consequently, Whites have difficulty producing practices and interpretations of those practices that Blacks can recognize as legitimate, and vice versa. As a result, the food policy council emerges from and remains trapped within a space of Whiteness, and few Blacks serve on the council or participate in its production.  相似文献

以深港边境中英街地区为例,运用实地调查和访谈方法,探讨一国两制下的深港边境生活空间形成、居民自下而上的再边界化、以及居民通过日常生活实践对边界的再定义过程。研究指出,中英街地区的生活空间形成是在边界效应下,边境居民对边境两侧管理差异的不断适应、调试、乃至主动运用的空间构建过程。边境管理者、居民、游客和水客等多方力量在此过程中互动角力,而中英街地区发展的不同阶段正是这一互动过程的结果;在此过程中,边境居民从被动的边界适应到主动的边界效应利用,体现了一国两制下居民的生活空间战略和自下而上的社会力量对边界及边境地区生活空间形成的作用。本研究有助于深化对于亚洲的边界和边境地区空间形成的理解,也对当下的边境治理具有积极的政策意义。  相似文献

Food tourism is a means to connect agriculture produce and tourism activity. Food tourism allows destinations to convey the authenticity that comes from their food heritage, which is closely linked to natural and cultural landscapes. Food and landscapes in New Zealand are strongly related to dairy production, cheese production being one of the main features. This study showcases cheesescapes in Canterbury, the largest region in the South Island of New Zealand in terms of milk production. On one hand, thanks to food tourism, the producers can explore ways to diversify their production. On the other hand, visitors are able to identify with the inhabitants of a country and ‘taste’ a portion of its landscape through gastronomy.  相似文献

随着社会研究的"空间转向"以及地理研究的"文化转向",城市消费空间成为城市社会研究与文化地理学研究的热点;然而在全球化推进过程中,地方化也在悄然兴起,玛吉阿米餐厅正是地方化催生的产物,并且自其开业以来就受到中外游客的青睐。基于这种背景,本文从经营者的空间建构和游客的感知两个角度,运用质性的研究方法对玛吉阿米进行研究,发现:经营者运用各种景观符号及名人轶事对空间进行建构与重构,使其成为一个极具民族风情与有故事的空间;而作为消费的游客,通过对实体空间、名人轶事的感知获得一种深刻的消费体验,而对餐厅的功能价值的感知程度较差,这也说明旅游消费也具有符号消费的倾向。  相似文献

本文根据2004年广东省第一次经济普查数据,分析了广东省的就业结构的专业化程度和类型。分析发现,广东省专业化部门以制造业和房地产、住宿餐饮、租赁和商务服务等较高层次的第三产业为主,且专业化部门的区域差异明显,广州、深圳和珠海市广东省最主要的经济中心,其专业化部门门类较多、层次较高,而珠三角的制造业专业化优势突出,粤东、粤西和粤北的专业化部门不仅数量较少,而且专业化部门层次相对较低。可以将广东省21个区域划分为4种类型,各类型之间的就业结构特征差异明显,广州、深圳和珠海被明显地聚为一类,粤东和粤北基本属于同一个类型,粤西和珠三角的其它区域则各属于一类。  相似文献

ABSTRACT

Increasingly, the notion of the commons has been mobilised as a way to articulate the possibility of other ways of doing/being/thinking life which are at odds with the logics of enclosure. Whilst practices of care have been identified as central in sustaining commons, there remains a need for more detailed conceptualisations of how commons are maintained through everyday practices of care. In this paper we draw on research conducted at The Old Church on the Hill in Bendigo, Victoria, Australia, to provide an account of the role, complexities and constraints of care in constituting a commons. Throughout the paper we develop the concept of care-full commoning which encapsulates the phases of care identified by Tronto (1993. Moral Boundaries, A Political Argument for an Ethic of Care. New York and London: Routledge, 2013. Caring Democracy: Markets, Equality, and Justice. New York: NYU Press) and is a term we use to describe the multiple ways that care is practiced through, in, and by human and non-human others that comprise commoning collectives. We discuss the everyday practices of care that have sustained this commons over time, arguing that paying attention to the work of care in maintaining commons is an important political task.  相似文献

Using the case of Berlin, this article examines civil society actors in relation to local bordering practices following the large number of refugee arrivals in 2015. Combining critical border, migration, and urban studies and adopting a Foucauldian lens, the article aims to illustrate to what extent civil society actors have challenged and transformed local bordering practices vis‐à‐vis refugees within a specific urban space. The analysis illustrates that civil society actors have created new spaces of inclusion for refugees and brought new political and normative challenges to the established notions of belonging. On the other hand, they have also reproduced bordering practices either by their integration into formal state structures or by reinforcing hierarchical categorizations and unequal power relations embedded in the notion of humanitarianism. Finally, the article argues that these de/re‐bordering practices of civil society actors should be understood in line with the constraints that established bordering processes and the existing political and structural dynamics placed on them.  相似文献
